<content:encoded><![CDATA[<p>Hey, Fran. During our wonderful dinner last night to celebrate the confirmation of Julian we did talk about the things that happened inside. Not only Julian was confirmed but his cousins also. </p>
<p>This is Sofia and her family. Dad had to work, as Mom is pregnant with a boy.<br />

And of course the family of Julian without Emiliano. Emiliano decided he would not be photographed for this big day. Little rat. He is hiding behind his parents. Julian had taken his long sleeved white shirt off as soon as he walked out of the church as it was wet with sweat.</p>

Any way back to what happened inside the church. I do not think there were any questions asked, but as the padre made the sign of the cross on their foreheads, he either gave them a little slap, pulled their hair or sort of gave them a head rub kind of thing (rough). Too bad that none of us could see anything, but they did have a loud speaker set up so we could hear most of what was said. Just lots of happy kids.</p>

<content:encoded><![CDATA[<p>Tacos Al Pastor is a delicious dish. It originated in the Arab countries on the Mediterranean, where it's made with lamb. The Moors brought it to Spain and the Spanish to Mexico. I loved it when I was working in Syria, where it's called Shawarma. Our mechanic dubbed it &quot;Wormburger&quot;, but we still enjoyed it.</p>

Vanessa from Casa Ceiba will attend on our behalf, take pictures and fill me in as best she can. It is to be held at a small church in her neighbourhood on the hill across from Commercial Mexicana. <br />

<p>Its main constituents are corn tortillas lightly fried and meat, which can be a combination of pork and beef or pork only (now mostly in central Mexico especially with the court called &quot;butt &quot;). Also the meat is prepared with a marinade made ​​from other traditional ingredients annatto, spices and crushed red chilies that give a distinctive reddish color. The popularity of this dish is such that it is liked by people of all social classes so it is easy to find in places ranging from gourmet restaurants to put on the street.<br />
In preparation, the meat as steaks (previously marinated) is stacked and baked in an iron stake rotating like a spinning top , in front of a fire also vertical which is roasted. When the meat outside the battery is slightly golden section the taco short list for deeper layers can be baked. The meat falls from the spin in thin layers directly on the taco tortilla holds with the other hand (a hand for the knife and one for the tortilla).<br />
The Tacos al pastor are usually accompanied with onion, cilantro, pineapple chunks, lemon and one of the many sauces that exist in different regions of Mexico, this of course the taste of each person.</p>

</blockquote><p>I can assure you Julian was ready for any question. He was a little nervous but ready. Nothing.</p>
<p>The confirmation was in a church that would possibly comfortably hold a few hundred people. There were over 400 kids with their Godparents. No room for parents or others who wanted to witness the event. I was outside about 20 feet back from the outdoor yet covered area. There were so many kids that we were there for almost 4 hours and sweat was pouring off everyone. If there were any questions asked I missed them.</p>
<p>After it was over the family and I went to a nice restaurant for lunch. Now we are all home and resting up for whatever comes next our way.</p>

<p>Mornings when I step out on my porch are usually spectacular. It is almost like getting a first hand weather report. This morning it looks like another sunny day. </p>
<p>Lots going on here for our little bunch. Today we go for the &quot;confirmation&quot; of Julian. He has been going to class at Aguas Corea for a year and today is the big day. Julian is 10 years old. He is excited and ready for this part of his learning. Tonight there is a big meal that will be fixed by one of his aunts. Fixed by one, hosted by the other. He is still asleep, but wants to get up by 8:00 as I have promised him breakfast at Gringo Loco this morning.</p>
