Mangoes!

It is so quiet and peaceful this time of year that our walks sometimes feel like we are the only ones in this paradise. One of the great things is that the mangoes are really starting to ripen for some varieties. I am enjoying the sweetest and most delicious mangoes that I think I have had anywhere in the world. I feel so privileged to live in a place like this.

That is the beauty of it all, there are different varieties that will be ripening from now until late August.

I use this great recipe to make mango cobbler if you aren't sure what to do with yours when they ripen.

Tropical Mango Cobbler

Ingredients

2 cups flour
2 cups sugar
4 tablespoons baking powder
1 cup whole milk
1- 1/2 to 2 sticks butter
6 cups mango
Use a 11″ by 13″ pan. Melt butter and put in the bottom of pan. Add the fruit and put the mixed batter on top and bake in a pre-heated oven at 375˚F (190˚ C) until slightly browned on top, around 30-45 minutes.

If you have more of a sweet tooth, mix the mangos with 1/4 cup brown sugar and add 1/2 teaspoon of cinnamon, nutmeg, and allspice. Melt butter and put in the bottom of the pan. Add the fruit and mixed batter on top. Bake as above.

Thanks for the recipe. Do you set aside any of the butter to mix in the batter?
If so, how much?

We’ve been eating delicious juicy ripe mangos for the past 2 or 3 weeks now. One of the best things about living in this region. B-)

So just wondering....The delicious mangoes that we buy at the Zihua farmers market in February. Where are they from?

No, amigo, they are local. Our region is a producer of some of the finest mangos in the world.

I don't disagree with you but many of my partner's family are telling me that the mangoes around here don't ripen until later and the ones in February are usually coming from Oaxaca and Chiapas which have slightly earlier growing seasons.

I don't disagree with you but many of my partner's family are telling me that the mangoes around here don't ripen until later and the ones in February are usually coming from Oaxaca and Chiapas which have slightly earlier growing seasons.

They could be right about the ones sold in the big stores. But I've received several bags of fresh ripe mangos from Petatlán during the past month. Had some for breakfast this morning. :-D

Me, too! I noticed cases of 'Ixtapa' mangoes showing up at the market here about 2 weeks ago. Now that I have Hromero's recipe, I think I'll go buy a case, make a cobbler, then sit outside in the sun to eat it & and pretend I'm in Z!

Sorry! I was stuck in the office today! I'll pick up the mangoes on Saturday, but it is supposed to rain then. If it rains too long, I'll just have to eat the cobbler in doors while looking at photos! Maybe some mango chutney, too? Any body have any recipes for that?
