Except for Mérida I've been in all the other zócalos you've mentioned and you're right, they are beside or in front of a cathedral. But I've also been in some other fair sized towns where the cathedral/church was a distance away from the zócalo or main plaza.
I've always considered the main place in town where the people gather for events to be the "zócalo". I wonder what the Zihua locals consider to be their zócalo.
Not being too pedantic myself, on the Centro map, I've called the square with the bandshell beside the basketball court the Zócalo/Plaza
