Don't know how flexible your route will be, but on your way up to Guanajuato, it'd be worth an hour or so side trip east to Querétaro City and another 45 min to the charming town of Tequisquiapan (edo.de Querétaro) Check it out on-line. I can give you a couple of hotel suggestions if you want.
