In Guadalajara's centro, just a half block from the main plazas, the Hotel de Mendoza is very gracious and quite nice. We stay there for the International Mariachi Festivals which is especially fun because Mariachi Vargas also stay there. We all greet each other at breakfast and chat in the elevator.
Ask for a room overlooking the pool - these rooms are off the street and some have tiny little balconies.

If you like to dance, La Esquela de Musica holds "neighborhood" dances a couple times a week. It's on the same street as the hotel, just a block down. I think the dances start around 4:00 PM.
