"Lety has raised her prices considerably from her “give away” prices the last 2 years. I know her costs have gone up and it’s just good business to charge what the traffic will bear. Especially since her window of opportunity is limited to the tourist season. She delivers an above average quality product, still at an exception value. "

Boy I just have to disagree with you on this!! Her prices at the previous "giveaway" were above average for her pre-Trip Advisor push as the number one restaurant in Zihuatanejo! I remember when she raised her prices for the coconut shrimp from $100 pesos to $130 because the dollar had changed value even though her prices had not!
And how can you seriously say " it’s just good business to charge what the traffic will bear." All that will do is price Zihuatanejo out of many of our ranges.
You also state that her "her window of opportunity is limited to the tourist season." You obviously refer only to the snowbird season since she has priced herself out of most of the locals and the Mexican National tourists.
