Who makes a good Ceviche ?

Remember that Mexican ceviches are different than Peruvian ceviches which are in vogue north of the border...

(in vogue or on vogue, what is correct?)

In vogue, I believe, is the typical parlance.

If you are in Ixtapa, they make excellent ceviche, tiritas, campachana, and much more at BEER BROTHER (across from Intercam, in the parking lot where Bancomer Bank is at ) Great fresh seafood, great price. A gentleman named Francisco has a table set up outside of the place. You will not be dis-appointed. For me, the best tiritas and ceviche I ever tried. And very cold beer.

Rojo or blanco?

The typical local is red, and I think overly sweet. I do prefer the white Peruvian style but haven't found it in Zihua.

When you order ask if it is white or red. I believe most places would make whichever you prefer.

Paty's, El Manglar, Rossy's are all good.

So what makes a red or white Ceviche ? Is it like Spaghetti with Tomatoes that makes it red ?

Small amount of ketchup and it sweetens it a bit also.

Still in Ixtapa - I like the cerviche de camarones, which is more prevalent in the east Yucatan - Fishers at the marina make an excellent one.

The original is in Barrio Viejo (San Jose Ixtapa) out on highway 200 but there is one in Ixtapa now but not sure where.I'm sure someone will let us know where.
