Since Natascha closed the Panisimo behind the bomberos, I've been going to Jaguar Negro as well. Far better than anything you will find at Soriana or the white flour boleos in the mercado. Their croissants are good too. There also is a guy in La Puerta who does sourdough round bread loaves. If you go past the Bodega and take the first left (near the gym on the second floor) and then the first right he's down about a quarter mile on the right. The sign says cafeteria. His name is Jorge.

jaguar negro in the mercado has a few varieties. However the options are expensive and you almost always have to order a day in advance. We have purchased Sourdough, 9 grain and a Gluten Free. All Very good. But like Rob says, the local bakeries are really good.

If I’m thinking of the same place you are they’re not quite in the Mercado.
They are very close to Fonda Doña Licha
And yes they have exquisite breads I haven’t seen elsewhere since Panisimo closed, or moved to its current location in La Ropa area. Not sure if they are open

I understand PAN-isimo bakery has closed permanently in it's Madera location. Anything comparable in the area? Sourdough, multi-grain, rye etc. Thank you all in advance - Much appreciated!

I think all our local bakeries make delicious breads.
