Back in Canada I used to make a Chardonnay vanilla sauce served over coffee spice rubbed grilled quail. You must use oak aged Chardonnay. I always brought back vanilla pods from the store Rob recommends.

Like Rob said.

Vanilla orchids do not grow here, but in very tropical seriously wet rainforests, think Chiapas. They are mostly handled around Poza Rica on the east coast where you can get amazing sculptures made of the pods. We still have several in our kitchen and they are still aromatic after many many years.

Wondering if there is anyplace in the downtown area or along the paseo de pescadores where we can buy local vanilla beans? OR---if no beans available where is the best vanilla to take home?
Thanks in advance!

You can get vanilla beans and excellent quality vanilla extract at Café Caracol, located next to the Plaza del Artista near the downtown waterfront.
