My wife is celiac so we deal with this all the time. Generally speaking the typical Mexican diet is mostly gluten free. Lately however we are seeing more wheat tortillas which are sometimes hard to distinguish from corn tortillas. In our experience it is difficult to find gluten free prepared foods in the super markets here. We bring a loaf of frozen rice bread and some pasta and she is good to go. Just make sure you can say what your requirements are in Spanish and it won't be a problem.
