We just watched Eva Longoria Searching For Mexico. She travels around the country tasting local cuisine. Shows on Sunday night on CNN. Highly recommended.

Many of the customs and culture of Oaxaca are from the period prior to the Spanish invasion. The food portrayed on the "show" is that of the Indigenous people of that region.
And it all looks absolutely delicious!

Oaxaca the capital had some of the best food right across the table (pun intended) we have had anywhere. The market stalls, small diners and fancy restaurants with linen. And the Casa Colonial with great music.(plug for a nice place to stay)
Casa Colonial is definitely a great place to stay. Jane, the owner, is the first girl I met when I moved to San Francisco, back in 1962. Tempus effing fugit!

¡Me encantan chapulines! My wife won't even look at them!
When I lived in Damascus, I ate grilled sheep testicles fairly regularly. I'll pass on the fired bugs.

I ate similar bugs in Vietnam, the problem I have is they only have the flavour of the spice on them so while in Oaxaca I took a pass. Full disclosure I was drinking some white lightning with some locals in a small town near Dalat at the time.

No doubt they are good for people its just the Yuk factor for most. Veggie burgers took off so at the price of beef, patties could be made from grasshoppers. Too bad during that plague of locusts they had not figured that one out. Protein a plenty for all.
