Has anyone seen sweet potatoes at the market anywhere in Z today? Mega had them a few weeks ago but not when I was there yesterday.

Many of the produce stores between the central mercado and campesino mercado have them, but they are purple here. Delicious but I think they take a bit longer to cook than the orange ones we're used to up north.

There are also white fleshed ones, we think the purple ones are a bit tastier.
Very occasionally, like russet potatoes and brown onions, what we think of as traditional sweet potatoes appear. That's when we eat them!

I bought camotes a week or two ago at the frutería at the corner of Los Mangos and Las Palapas. I made “yam fries” in my air fryer.

I toss the uncooked camote fries in a teaspoon or two of oil and air fry them. I like them a bit blacked, so that is how I do them. I like them. A friend makes yam fries and says they are kind of soggy. I think he tries to air fry too many of them at once. My friend liked it when I cook them.
Come to think of it, I’ve never had their yam fries. Maybe they’re saying that just to get me to cook.

I was under the impression that air friers were invented by health food freaks wanting to avoid the use of oil.

Air fryers were invented to make French fries. They use less oil, but in order to get the crisp outer layer that people seek, a tiny amount of oil is needed. Otherwise, the outside gets dried out.

Soriana this morning had lots of what we would call "traditional orange yams" However, no price on them.
